Chicken Gnocchi Soup
Here is a quick and easy Gnocchi soup recipe that your residents are sure to love and your caregivers will enjoy making!

Ingredients
3-4 boneless skinless chicken breasts diced and cooked (We like to season it with salt & pepper)
1 stalk of celery, chopped
1/2 white onion, diced
2 teaspoons minced garlic
1/2 cup shredded carrots ( optional if you don’t like carrots don’t add)
1 tablespoon olive oil
4 cups chicken broth
salt and pepper
1 teaspoon thyme
12-16oz potato gnocchi (rana is our favorite brand)
2 cups half and half
1 cup spinach chopped (fresh is best but frozen works fine too)
Directions
Heat olive oil in a large pot over medium heat. Add garlic, onions, celery (and carrots if you’re using) and saute for 2-3 minutes or until onions are translucent.
Add chicken, chicken broth, salt, pepper, and thyme and bring to a boil.
Stir in the potato gnocchi and boil for about 5 minutes before reducing the heat to a simmer.
cook for ten minutes
stir in the half and half and spinach and cook for another couple of minutes until the spinach is tender.
add salt and pepper to taste and serve!

Serve with baked garlic bread on the side
